Apple Cake

A hint of Fall is in the air. Yes, indeed. Autumn is my favorite time of the year. Really and truly! The gorgeous jewel tones found in the colorful leaves, the lighting this time of year, it's breathtaking. The crisp, cool evenings and mornings, with the warm afternoons. My favorite!

Just now, I made apple cake. It's gluten-free, and here is the recipe I whipped up.

Apple Cake - Gluten-free Whole grain loaf

Sweet Apple Bread loaf

3 eggs
1 cup buttermilk
dash of salt
1 teaspoon baking powder
1 teaspoon vanilla extract (make sure it's gluten-free)
1 teaspoon cinnamon
1/2 cup tapioca flour
1/2 cup sorghum flour
1 cup white rice flour
1/2 cup almond flour
1/2 cup sugar (feel free to add more or less)
2 or three medium size apples, sliced into small pieces (I used organic, freshly picked Gravenstein)

2 tablespoons flax meal for sprinkling on top

Preheat oven to 350 F.

Mix all ingredients on medium to high speed with your mixer.

Grease a large size loaf pan and sprinkle with rice flour (just a dusting will do)

Pour batter into the large loaf pan.

Sprinkle the flax meal on top of the batter, and bake for 45 - 50 minutes at 350 F, or until a knife comes out clean from the middle of the loaf.

Let cool. Pat out of the pan. Slice and enjoy. These make a nice little baked gift, if you like. Next time I will double my batter and make two. One for us, one to share!

Fall is beautiful, I love it! I don't bake very much, but I love eating all these delicious pies. I've never done a apple pie before. I did a berry pie once. Martha's recipe. It was pretty good!
