
Apple Carrot Muffins
1 large carrot, peeled and grated
1 granny smith apple, peeled and diced
2 eggs
2 Tablespoons honey
dash of salt
1 teaspoon baking powder
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup butter, softened
1/4 cup milk
1/4 cup water
1/2 cup tapioca flour
1/4 cup millet flour
1/2 cup almond meal flour
1/2 cup rice flour
1/4 cup teff flour
Mix all ingredients until batter is smooth.
Pour the batter into the muffin forms, filling 3/4 full. Sprinkle a heaping spoonful of almond meal flour over the top of each muffin.
Bake at 350F. for 25-30 minutes.
Cool, eat and enjoy!

It appears Winter has finally come
Here it is mid January, and it appears that Winter has arrived. Brrrrr! Okay, I am not being wimpy, because I know that I do not have a snowy driveway to shovel out of, but it is chilly. Now, where is the rain? The hills around here are way, too dry!



The beautiful weather we experienced in December allowed us to hike the Tennessee Valley trail. Talk about gorgeous! We can't wait to go back!!!

Monday, and A happy little quilt
So, I made my sweet Momma this lap quilt, for her birthday. You can't go wrong with Amy Butler's beautiful fabrics from her latest Lark collection! The quilt is approximately 60" x 60".


Thanks to my friend Pat, who did the gorgeous quilting.
