Tea Biscuits

Here is the recipe I promised to share!

Zesty orange tea biscuits

1egg
3 tablespoons unsalted butter, melted
dash of salt
1 1/4 teaspoon baking powder
zest of one large orange
1/4 cup agave or 1/2 cup sugar
1 cup buttermilk
3 tablespoons currants, or raisins chopped
2 tablespoons cornstarch
1 cup tapioca flour
1/2 cup oat flour
1/2 cup rice flour
1 cup sorghum flour

Preheat oven to 345 F.

Grease your baking sheet.

Mix all ingredients by hand or with electric mixer.
Roll dough out onto floured surface. You can cut shapes free hand, such as squares, or use a cookie cutter. You can even roll them into balls and flatten them with the palm of your hand, on the greased baking sheet.

Bake at 345 for 15 minutes or until slightly golden.

Let cool.

Enjoy these with your tea. These taste like scones, but are slightly crunchy like a biscuit. Delicious! Have fun with the recipe, and feel free to substitute dried cranberries, etc....

Rainy day, rainy day

Rainy day, rainy day, come and wash our germs away..........take away the flu germs from our house, today!

Freshly picked lemons

We've been using fresh lemon juice in our cucumber, vegetable juice. I love having a juicer! The extra bit of clean up after juicing is so, so worth it. Vegetable juice is packed with vitamins and alkalinity to keep healthy. This morning we threw in a cucumber, carrot, parsley, and a few drops of fresh squeezed lemon juice. You can add garlic, and pretty much anything fruity, greens, or vegetable related that you have on hand. I can already feel the cleansing effects of the juice. We're fighting nasty, cootie germs in our house. Ear infection, bad cough, fevers. More juice please! I'll take a double!

Meanwhile, the rains are freshening up the air, and making our rolling hills more green! We like it that way! This kind of weather makes us in the mood for hot soups. I've used my crock pot almost every day this week.

Yesterday we stayed in all day (sick day) and made doll clothes. Our favorite patterns are from Patty Young's Mod Kids series. Yesterday's dress was the Mini Frida pattern.

Gonna go and snap some shots of the freshly fallen snow on the hills around here. Snow is not something we see in our neighbor hood very often. Let me repeat, very seldom!

Gingery, lemony goodness all wraped up in one delicious cake

Oh.my.goodness! We just had the best.cake.ever! It is moist and delicious. You really need the fresh, grated ginger and lemons. Powdered ginger does not taste the same as fresh ginger.


Ginger Lemon Cake


Ginger & Lemon Cake

1/2 cup white or brown rice flour
1/2 cup Tapioca flour
3/4 cup Sorghum flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/8 teaspoon ground nutmeg
2 Tablespoons freshly grated ginger
2 Tablespoons grated lemon zest
1 teaspoon vanilla extract
3 eggs
1/8 teaspoon salt
3/4 cup sugar (or 1/4 cup agave)
1/2 cup sour cream


Preheat oven to 350. Wipe butter in a square 8 inch pan, and sprinkle rice flour over the butter so the cake won't stick.

In mixer, blend all ingredients on high speed, until thoroughly mixed. Pour the creamy batter into the prepared pan, and bake for 30 minutes, or until knife comes out clean. Cool before frosting.

Cream cheese frosting:

1 pkg. cream cheese, softened
2 teaspoons vanilla extract
3 teaspoons butter, softened
1 teaspoon lemon zest
3 tablespoons honey or agave

Mix all ingredients on high speed with electric mixer, until frosting is smooth. Spread onto the cake, once the cake has cooled. I like to spread my frosting on, when the cake is slightly warm, so the frosting goes on smooth. Can you say yummmmmmmy?!!!!!!
