Wheat Free Carrot Cake
Grease and lightly flour two 9x1 & 1/2- inch round baking pans or grease one 13x9x2-inch baking pan; set pan(s) aside.
In a large mixing bowl combine flour, sugar, baking soda, and cinnamon. Add carrots, crushed pineapple, and eggs. Beat with an electric mixer till combined. Pour batter into the prepared pan(s).
Bake in a 350 degree oven for 30 to 40 minutes for round pans, or 35 to 45 minutes for the 13x9x-inch pan or till a wooden toothpick comes out clean. Cool layer cakes on wire racks for 10 minutes. Remove from pans. Cool thoroughly on wire racks. Frost with Cream Cheese frosting. Cover and store in refrigerator. Makes 12 to 16 servings.
Cream Cheese Frosting
Beat together two 3-ounce packages cream cheese, softened; half a cup of butter, softened; and two teaspoons vanilla till light and fluffy. Gradually add 2 cups sifted powdered sugar, beating well. Gradually beat in 2 and one half cups additional sifted powdered sugar to reach spreading consistency. This frosts tops and sides of two 8 or 9 inch layers. Cover and store cake in the refrigerator.....or eat immediately!!!! YUMMY!!!! ~~
I have been absolutely spoiled by my family, over my birthday! Makes turning another year that much easier...........my family made me a Wheat Free Carrot Cake! It turned out delish and we get to eat it tonight! I truly appreciate this effort, as it takes some time to edit the recipe and test it with alternative flours. I am hoping there is someone else out there that can benefit from the recipe we came up with.

Freshly Picked......Happy Victoria Day, eh!
I just love these roses! I can see them out my kitchen window..........we got them as a transplant from some friends, when we first moved to this house. They are climbing all over the fence, a few years later. They are super fragrant!!! You clip one cluster and it makes for a nice boquet. So, Happy Victoria Day, eh (to all our Canadian readers)!!!!

Fun Finds

Lovin these cute new hooks that I picked up at Anthropologie this weekend! They match my studio, perfectly!! Another new bag I made yesterday. ~ Then there's the new ribbon holder I found at my favorite Honeybee's consignment shop downtown. Hubby painted it a smart red....the original shelves were a glossy pine look........rather dull in my colorful art room. It is so cute and appears to be handmade by someone. Love the intricate cut outs and details.

Hip-Hip Horray for May
Ahhh yes..........May! Don't you just love the Month of May..........Spring is well under way and summer is just around the corner. Mmmmmm....I can smell the roses blooming and the hear the honey bee's buzzing. The other day, my girlie reminded me about a cute dress I had made for her a few years ago and that we needed to take sissy's picture in this dress as well, before it doesn't fit her. It was just too cute to go without a photo or two. As if they need anymore cute dresses! No lack for cute clothes in their lucky closets, bursting at the seams.
