Now that it's officially Fall ....... and I'm back home, my cooking urge came on strong! Something to go with my cuppa tea ............Mmmmmmuffins!

Gluten free comfort food

I made these from scratch and crafted the recipe as I went.....

Gluten free muffins

Here's the recipe for ya..........

Laurie's Cornmeal Oatbran Muffins (gluten free)

3 eggs
2 tbsp. honey
1/8 tsp. xanthan gum
dash of nutmeg and or cinnamon
2 tsp. baking powder
dash salt
1 1/2 cup cornmeal
1/2 cup corn flour (Masa Harina)
1 cup tapioca flour
1 cup milk
3/4 cup water (add more if batter becomes too thick)
1/2 cup olive oil
1/2 cup oat bran (Gluten Free)

Beat with electric mixer on high, until batter is smooth.

Pour into muffin pans.
Makes a dozen

Bake at 350 for 20 minutes or until done.

I topped mine with butter and homemade strawberry jam. YUMMY ScRUMMY~

PS... just so you know, they are ALL GONE! The kids and I devoured them in one day!
