Love Cakes
1/2 cup oat flour (gluten-free)
1 cup tapioca flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon xanthan gum
1/3 cup honey
3 tablespoons olive oil
1/2 cup orange juice
2/3 cup buttermilk
1 egg, beaten
4 large strawberries, sliced thin
Stir together all ingredients.
Pour batter into muffin molds.
Bake for 15-20 minutes at 350 degrees F.
Makes 12 muffins
These have been a staple in our house, ever since I was a child at home. They are delicious served fresh from the oven, with a dollop of butter.

Sunny day, breakfast lingerings
Oh how I love my quiet mornings.............time to do the dishes in peace and quiet, get the house tidied up quickly, no interruptions............I'm on a roll. Throw a load of laundry in, do a bit of sewing if I have the time. It's all about multitasking!
* Think about life.
* Be grateful for all I have.
* Think of positive things that make me smile.
* Shut out thoughts that make me mad or frustrated.
* Take time to exercise
* Plan ahead for healthy meals, before I get hungry and want to snack.
* Put a smile on my face even if I'm feeling pressed or down.
* Take time to unwind and say no to "extra's" when life gets a bit harried.
How do you spend your mornings? I know it is not possible to have quiet mornings every day, but when I do have them, I like to grasp the opportunity to make the most of my day!

Phoebe!
Isn't this little elephant super cute!!!!!!!! The moment I saw this pattern, I knew I had to make a few elephants. This cutie was for a sweet little one year old.

Yellow and Green!
Spring has sprung here! It's so lovely out, and the buds are popping out on the trees and the birds are singing, and we were in short sleeves and sandals yesterday. I know, I know, it's only a teaser, but we will likely have more of these days to come!

I just LOVE this splash of yellow and green, on the coastal hills!

Canadian eh?

Anyone else excited for the Vancouver 2010 Olympics to start tonight? YAY! We've got Canadian's in the house!
....it's all happening in our own beautiful British Columbia! It's HOME! Have you heard the theme song?
Do you have tickets for any events? Wish we did! We have friends who will be attending at least one event. My favorite's are figure skating and I've loved following along with this wonder woman. What do you think about Skeleton sport? Scary stuff!
Should be a blast. You should be able to watch the Olympics live, on the internet.

I heart toast
What a fun way to eat your toast and egg, all in one! We used gluten-free bread! It was top notch..........just ask my kids! 
With Valentines Day on it's way, we decided to add a little fun to our food. It's easy, and fun to eat! You simply take a heart cookie cutter, and punch out the center of your toast. Put the bread into a frying pan on your stove. Add a tablespoon of butter....turn on the heat to medium....melt the butter. Scramble an egg, a bit of spinach if you like, green onion, parsley, or whatever sounds good to you. Some ham bites? Pour the scrambled egg filling into the heart. Cook halfway, carefully turn over the toast and cook the other side.........be sure to cook both sides of the heart cut out as well. These are delicious with your favorite jam or honey~
Have yourself a heart for breakfast!

Has it really been two weeks?
Wow, it has been two weeks since I last posted! Checking in from the sickie house......we've had our rounds of pneumonia and sinus infections! February is here, and January is behind us. I had to laugh out loud yesterday. I was on the phone making an appointment, and the lady on the phone was giving me a few dates to pick from, and I said to her: "is this for January or February?" She calmly told me: "This would be for February." Oh my! February is practically half gone! Guess thats what happens when you are stuck in your house with sickie kiddies.....sometimes life with little ones feels like time is moving so slowly. I always tell myself that there is someone out there that is far worse off than myself. So there, I don't feel bad at all for us. We are on the mend.
On a brighter note, just look, at the moody skies we've been blessed with! I get to look at this out my windows! So pretty!


Here we are, nursing our sick teddies and Koala-Lu, back to health. They feel so cozy, all swaddled up in their fancy flannel quilts. Those lucky teddies!
