Here is the recipe I promised to share!
Zesty orange tea biscuits
1egg
3 tablespoons unsalted butter, melted
dash of salt
1 1/4 teaspoon baking powder
zest of one large orange
1/4 cup agave or 1/2 cup sugar
1 cup buttermilk
3 tablespoons currants, or raisins chopped
2 tablespoons cornstarch
1 cup tapioca flour
1/2 cup oat flour
1/2 cup rice flour
1 cup sorghum flour
Preheat oven to 345 F.
Grease your baking sheet.
Mix all ingredients by hand or with electric mixer.
Roll dough out onto floured surface. You can cut shapes free hand, such as squares, or use a cookie cutter. You can even roll them into balls and flatten them with the palm of your hand, on the greased baking sheet.
Bake at 345 for 15 minutes or until slightly golden.
Let cool.
Enjoy these with your tea. These taste like scones, but are slightly crunchy like a biscuit. Delicious! Have fun with the recipe, and feel free to substitute dried cranberries, etc....
